Jack is Cooking Egg in a Basket

Well Hello Internet!

Tonight i made an old favorite when i’m way too lazy to think of something to cook. Eggs are always in the fridge, and i always have bread.

This is just a tiny bit (well ok, a whole lot!!) yummier than just plain old fried eggs on toast!

You will need:
Eggs
Bread
Butter
Heres what to do. First prepare two (or more if your that hungry) slices of bread. Take a shot glass or something and cut out a nice circle in the middle:


Next melt some butter in a frying pan, and put the bread in the pan, INCLUDING the bits you cut out! (these are the best parts! they get all buttery and delicious!). Rub them around a little, and then flip them over. this is important so that both sides of the bread get buttered, and one side doesn’t hog it all!
Ok, so once your bread is all nice and buttered, crack two eggs over the bread. the circles should be the exact same size as the egg yolks. they will then sit nicely in the holes, and the egg whites will sit on top of the bread.

Fry them this way for about 4 minutes, maybe a little less (it does take a little longer than actually frying an egg…) The best way to know is to keep your eye on the bread holes that are frying next to the bread. Once they are nice and golden on one side, you know its time to flip!
Flip!
Oh man its lookin’ good now! ok, so a few more minutes on this side, until the eggs are cooked, and then toss them out onto a plate!
Tah Dah! Egg in a basket. Everybody likes these! normally more for breakfast, but the incredible edible egg is always good! Breakfast, Lunch, Dinner, or a Midnight Snack!
if you must insist you can throw some lettuce onto the plate also, and then there will be something green to go along with it…. or Bacon! hahaha

Jack is Cooking a Spanish Omelette (Tortilla)

Well hello Internet!

Tonight I am making a Spanish Omelette, also known as a Tortilla.  My mom used to make this for me all the time when i was a kid.  its delicious and very easy to make.  I have thrown in a little twist to the standard omelette but otherwise the method is the same.

First I put some onions and potatoes that I had sliced very thinly into a pan with a good amount of olive oil. Next I added some broccoli, but only the stalk of the broccoli which I also sliced very thinly.

Here is everything in the pan:

i cooked everything in the oil over a medium low heat for about 20 minutes.  then i turned the heat up quite high just for 5 minutes, to give the potatoes a little crispy edge around the outsides, and to get the onions to caramelize just a bit.

after that i took 4 eggs that i scrambled and poured them over the potatoes

let that cook a little bit and then when the omelette is mostly cooked its time to flip it.  you need to use a plate.  slide the omelette onto a plate so that the uncooked eggs are still on the top.  now then holding the plate in your strong hand, put the pan upside down over the plate.  then flip!

cook it for just a minute or two more and then slide it back onto the plate.  and your done!

its good with some salad, and some toast.

its quite filling so i will have leftovers for lunch tomorrow also!

Jack is Cooking a Sandwich and an Omelette (part 1)

Well hello internet!

Tonight (and most nights actually…) i am making my lunch for tomorrow and dinner tonight. i’ve perfected a method of doing both at the same time by making a sandwich, and then an omelette out of the same materials.

you can use any different ingredients, but heres the essentials

some kind of bread
some kind of meat
some kind of cheese
lettuce
mayo
butter
other assorted condiments
and eggs for the omelette

Jack is Cooking Pad Thai




i’ve been away traveling. so i’ve decided to cook something i learned in my travels. pad thai.

pad thai is super easy. here’s what you’ll need
rice noodles
tofu or chicken
1 egg
green onions
bean sprouts (about a handful)
2 tbspns pad thai sauce (you can find this stuff in most big grocery stores. stop and shop and whole foods both have them i know it!)
1 tbspn fish sauce
soy sauce
1 tbspn sugar
chili sauce (optional)
crushed peanuts
lime juice
